I modified this from the one here.

Ingredients

  • 300g of haddock, boned and not dyed (although mine was neither), skin removed, cut into chunks
  • 200g of rice, I used paella, but basmati probably works as well
  • an onion, finely chopped
  • inch or so of ginger, finely chopped
  • some garlic, finely chopped
  • 50g of butter
  • 200ml of milk
  • 200ml of water
  • some chopped parsley and coriander
  • chopped green chilli
  • tsp curry powder (madras, although I used the basic curry powder recipe + half a tsp of cayenne)
  • some cumin (tsp or so)
  • some black mustard seeds (tsp or so)
  • 3 eggs
  • salt and pepper

Method

Hard boil the eggs and set aside.

Melt the butter in a pan over a medium head, add the cumin and mustard seeds.

When the mustard seeds start to pop, add the onion, garlic, ginger and chilli and cook for a few minutes.

Add the rice, curry powder (and cayenne if using it.) stir and cook for another few minutes

Add the milk and water and some salt.

Once it's simmering add the fish, and continue to cook until the rice is done.

Once it's done, add the chopped herbs, quartered hard boiled eggs and some black pepper and serve.
