Onion soup

Ingrediants

  • 4 or 5 medium Onions
  • Garlic (couple of cloves)
  • 2tbs flour
  • 40g Butter
  • 1l Beef stock
  • Olive oil

Method

In a pan, over a low heat melt the butter and a glug of olive oil. To this add the sliced garlic and the onions, peeled and thinly sliced. Let the onions soften until golden and caremelised. They should be golden and soft. This should take about 30-40 minutes.

Add the flour and stir, cook for a minute or so, then add the beef stock and simmer the soup for 30-40 minutes.

Serve with some good bread or croutons, maybe with some cheese grated over the soup.

If you can be arsed, chop a baguette, rub with garlic, and grate some cheese over, then grill until nicely done. Use these as croutons in the soup.
