Beef and tomato curry

Ingredients
- Beef (I used thinly sliced roast beef from the fridge, but cubes of some kind of steak are good too.)
- 2 Onions, finely chopped
- 4-5 tomatos, peeled and chopped
- 5 cloves garlic, crushed
- whole cumin (tsp or so)
- tsp corriander
- inch fresh ginger, chopped (I'd run out, so used some ground)
- 2 dried red chillies
- 2 chopped fresh green chillies
- 2 bay leaves
- 1/2 tsp sugar
- Salt
- a glug of oil
- Cinnemon stick
- 100-150ml of water
Method
Heat the oil and fry the dried chilli and bay leaves until browned. Remove from the oil and discard.
Add the cinnemon, onions and cumin to the pan and fry until golden. Add the garlic, chilli, ginger and corriander and fry for 30 seconds or so.
Add the tomato's, sugar and salt to the pan and fry for a bit until oil appears on the surface.
Add the beef and fry until browned.
Add the water, bring to the boil, cover and simmer for an hour or so until the beef is tender. (I was using precooked beef so only did half an hour.)
