Fried egg curry

Ingredients

  • 3 EGGS
  • 1 Red Onion
  • 2 green chillis
  • mini chooped tomatoes can
  • fresh coriande rleaves.
  • pinch of salt
  • pinch of curry powder
  • pinch of turmeric
  • Mix of lentils like poppy seeds, split peas, and urdu dal and jira
  • 2 spoons of oil.

Method

Finely chop onions and chillies.

Head 2 spoons of oil in a heavy bottom pan and add the lentil mixture, cook until lightly browned. Add the onion and chilli mixture and fry for another couple of minutes. Next add the salt, turmeric and curry powder and cook for a further minute. Then add the chopped tomatoes and cook for a further 2 minutes.

Reduce the heat and add the raw eggs, mixing slowly until the curry becomes almost dry.

Add fresh coriander.

Eat with a spoon.
