Ingredients
- 1 small onion
- 2-3 cloves garlic (crushed)
- Tin plumb tomatos
- 4 Eggs
- Salt + pepper
Method
First, fry off the garlic in some olive oil over a medium heat...
Next, slice in the onion:
And fry until softened (about 10 mins or so), seasoning as required. Once they look like this:
Add a tin of plumb tomatoes:
And give them a good mush up:
Then leave them to cook for 30-45 minutes over a low/medium heat until they look like this:
Now crack in 4 eggs:
And cook, covered, for another 10 minutes:
