Ingredients

  • tsp or 2 mustard seeds
  • 3tsp cumin
  • tsp garam masala
  • 2 tsp ground corriander
  • crushed garlic
  • ginger finely chopped (I acutallyed used pureed garlic/ginger from a jar, 3 tsp thereof)
  • Sliced spring onions (or finely chopped small onion)
  • Sliced mushrooms
  • Basmatic rice
  • veg stock
  • basic curry powder
  • Peas
  • tsp lemon juice
  • chillie (I used a couple of dry ones), chopped
  • salt
  • oil for frying

The doings

Chop spring onions and mushrooms.

In microwave rice maker, put washed basmatic rice add tsp cumin. Add boiling veg stock, sitck in microwave for 6 mins.

Meanwhile, in a pan fry the mustard seeds until they start to pop, add the rest of the cumin and fry for 30 secs or so. Add garam masala, ground corriander and fry 30 secs. Add ginger/garlic, fry 30 secs, add musrooms, chillies and onions, lower heat and fry.

When rice beeps, stir in half a tsp of basic curry powder and put back on for 6 mins more.

When rice beeps again, add some peas and bung on for another 2 minutes. Raise the temp of the frying pan a bit. Add a tsp lemon juice.

Once the rice is cooked add it to the pan and stir everything together.

Serve.
