If you want pretentious then the Gordon Ramsay ones are at the bottom.
As with most things I nicked these off a youtube vid, although they are slightly different.
Onion Rings
Ingredients:
- Onions
- Plain flour
- Yougurt
- Milk
- Water
- Tabasco sauce
- Breadcrumbs
- Seasoning:
- Garlic powder
- Chilli powder/cayanne pepper
- White pepper
- Salt
- Ginger powder
Method:
Prepare the onions
The trick to this is to marinade the onions, the video suggests 8 hours but I've done anywhere between 10 mins and a few hours.
In a large bowl bung in some yogurt (maybe 100ml or so), then let that down with milk and water so you've got a bowl of liquid. To this add a good gob of Tabasco for flavour and the acidity helps break down the onions.
Add whatever seasoning you fancy to this mix and mix well. I used a vague combination of the above.
Slice your onions to the desired thickness (about 3-5 cm) and bung them in the yogurt mixture and leave them for a while.
Add the flour
In a nice flat pie tin I bung some flour, coat the onions in the flour. Don't get too much flour on at this point, less is more. Basically you want to cover the onion in the flour then knock off any excess flour. Put the onions to the side.
Breadcrumbs
Next you need to bread the onions. I use the same pie dish but this time filled with breadcrumbs. (I used both Sainsburys and the Oxo 'Southern Fried' ones, both work well).
To do this i quickly dip the onion ring back in the wet dredge then into the breadcrumbs to coat.
Freezing
If you want to freeze them, this is the time to do it.
Cooking
Deep fry the onion rings until they're golden, takes about 5 minutes in 170-180 degree oil.
