Sweat some onions and a couple of cloves of garlic in some ghee/butter + olive oil for about 5 minutes over a low heat, don't brown.&lt;br /&gt;
&lt;br /&gt;
Add asparagus chopped to about an inch and a half long (couple of packs, around 700-900g) sweat for 5 minutes more&lt;br /&gt;
&lt;br /&gt;
Add vegtable stock (a pint or so), simmer for 10 minutes until asparagus is soft&lt;br /&gt;
&lt;br /&gt;
season&lt;br /&gt;
&lt;br /&gt;
blitz&lt;br /&gt;
&lt;br /&gt;
stir in some chopped herbs (eg corriander) and season&lt;br /&gt;
&lt;br /&gt;
add about 150ml of single cream and reheat very gentally so it doesn't split.&lt;br /&gt;
